Menu for October 8 thru October 12

Well, it looks like a week up and slipped away from me.  Which is easy to do these days!!!  Seems like there is always so much going on!!!  Anyway, I'm still trying to figure out the best way to keep this blog updated.  So this week I'm trying a new approach.  I'm going to list out our weekly menu first.  Then come back and elaborate on as much as I can.  So let's get this started.....

Not sure yet....we may have a race so if we do, we'll be on the road.

I've really got to get better at making a menu plan in advance....especially before I go to the grocery store.  Because trying to make a menu after the fact is a little more difficult since I'm having to base the menu off of what I have on hand.  I think if I make the menu first, purchase the items needed for each recipe, then I won't have to think as much on what we will be eating!  May sound lazy, but with 3 kiddos, working full time, boot camp 3 days a week @ 4 AM.....this momma is worn out!!!!!  LOL

Wednesday 09/26 & Thursday 09/27

Wednesday

I made Crockpot Salsa Chicken with my Spanish Rice.  Sorry I'm not elaborating much on this one.  I promise I will when I make it again.  Because I will DEFINITELY be making this again!  It was wonderful!!!!!!!

It really was good and had plenty of leftovers.  Knucklehead 2 liked it.  But Knucklehead 1 said it was horrible....but he's becoming quite picky in his teenage years so I wouldn't necessarily take his opinion to heart!  LOL

And as for my Spanish Rice....I'll talk more about that later.  :-)



Thursday

Boy did we have a busy day today!  Or I should say Knucklehead 1 and I had a busy day!  Today was the day to get his braces off!!!  WooHoo!!!  But he also had to have some dental work done, so he and I just spent the whole day together.  He even treated me to lunch at Olive Garden.  Well, maybe I was the one who treated him.  Anyway, he at least was ok about being seen in public with me!  You know how teenagers are.....or really I don't know how they are because this one changes from one minute to the next!  LOL

Anyway, by the time we finally made it home I was a little stumped on what I was going to make for dinner.  I did have some ground venison thawed out so I knew I would need to come up with something that used ground beef.  I thought to myself, well I still have what's left of the marinara sauce that I didn't use on Tuesday; So right then, I knew I wanted to make this an easy night since I had to also bake a dessert for the Homecoming lunch tomorrow at school.

And this is what I created:

Crescent Roll Pizza Pockets
  • 2 cans of crescent rolls
  • Ground Venison (or Beef)
  • Spaghetti Sauce or Marinara Sauce (the large jar)
  • Shredded Mozzarella Cheese
I think I've seen a recipe like this before but I can't remember where or I would attach the link.  Preheat your oven according to the crescent roll package.  Brown your meat (I seasoned mine with garlic salt and Italian seasoning).  When the meat is cooked, drain off any excess fat.  This is one reason why I use Venison.  There's never any grease!  Once drained, stir in the spaghetti sauce.  Then you are ready to start stuffing the pockets!!

When you unroll the crescent rolls, leave them in a rectangle (so essentially you are putting 2 triangles together).  I mashed the seam, loaded it with the meat mixture on one end.  Topped with the shredded mozzarella and folded the other half on top of it.  I pressed the edges together and laid on my baking stone.

Once I had them all laid out nicely, I sprayed the tops with my butter cooking spray.  That way you're not adding extra fat, but they will turn a nice golden color.

This is all I cooked tonight....we had so much going on as far as preparing for the upcoming race weekend, Homecoming tomorrow, and just our everyday living that I needed something easy.  Because then I had to make a dessert.  I went with this:

And let me tell you they were AMAZING!!!!  I cheated and had one even though they are for the lunch tomorrow.  I will tell you that under TIPS where it says "Be careful not to over bake", she is absolutely correct!  They are not as moist if you bake them too long.  They still taste good, but not like my 2nd batch did.  These will definitely be made again in our house!!

As for tomorrow......well it's game day...and it's Homecoming...so it will be leftover night!!  Hope everyone had a great weekend!  I'll try to be better at posting in the future!  :-)

Tuesday 09/25

Tuesday came quicker than I expected, but I actually set the chicken out last night to thaw.  I was proud of myself.  :-)

Anyway, tonight we had Baked Chicken Parmesan with Easy Parmesan Knots.  Now I can't take the credit for these wonderful meals.....all I can say is thank goodness for PINTEREST!!!!!

I've made the chicken before and it was a huge hit.  This time I added the Knots and they went over really well also!  I also boiled some Fettucine noodles to put the Chicken on.  And dangit I didn't take a picture....AGAIN!  I promise I'll get better at this.

I'm going to cheat today and just give you the website links for this meal.  Like I said, it's a huge hit in our house and easy on the waistline believe it or not.  This is definitely going to be one of our regulars.  :-)

Baked Chicken Parmesan




Easy Parmesan Knots




On this one, I did not use Canola oil...I used Olive Oil.  I don't keep Canola in the house, but that's just me.  I also could have eaten everyone of these by myself, but as hard as I'm working at Boot Camp I refrained.  And boy was it hard!!!


Fettucine Noodles

I just boiled some generic brand of noodles that I grabbed at Family Dollar while I was looking for Homecoming dress up things.  I added some Olive Oil and some Parsley Flakes.  I've never done that before, but I will definitely do it again.  Everyone loved them that way!

Monday Night Madness....actually Mellowness.....


Going to try something new here.....I'm going to try a daily and maybe sometimes weekly post of what our menu plan has been.  I've really been wanting to focus on creating a menu and sticking with it.  So far this is the first week for me to do this.....and so far so good.  Not once this week have I stepped into my pantry and racked my brain trying to figure out what I was going to throw together for those hungry animals that call me "Momma" and "wife"!!!!!  :-)

Anyway, so here it goes.......

Monday....09-24

Baked Tilapia and Veggies

I didn't take a picture but man I should probably start doing that.  Anyway, tilapia is always a big hit in our house and I'm always trying to come up with new ways to cook it without frying it!  So here's what I did:
  • ·      Panko Bread Crumbs
  • ·      Pampered Chef Citrus Basil Rub
  • ·      Sea Salt
  • ·      Black Pepper
  • ·      Lemon Pepper

  • ·      Egg Whites (in a carton)
  • ·      Milk

  • ·      Tilapia

I mixed the crumbs and seasonings in a shallow dish.  I dipped the tilapia in the milk mixture and then the crumb mixture.  Sprayed a 9x13 casserole dish, put the fish in, and baked @ 450° for about 20 minutes.  Making sure the fish flaked easily and was white.

For the veggies…..well I need to use all the shortcuts I can so we used good ole jolly Green Giant Valley Fresh Steamers frozen veggies (a broccoli and carrot mixture).  We also tried a new one to us type….Roasted Potatoes with Garlic & Herb Sauce.  Let’s just say that these were gone before anything else!  Were a huge hit and I was informed that I needed to cook 2 bags next time!  ;-)

So Monday night was a success!  Our bellies were full and satisfied!!

Tomorrow night……Baked Parmesan Chicken with fettuccine noodles and Easy Parmesan Knots!

June - it just flew by.....

Can't believe that June is already over....it was a very eventful month for us.  Weddings, races, camps, you name it...there was always something going on.


The month started with someone I hold close to my heart getting married.  It was a beautiful wedding and I wish them nothing but the best.  That same weekend my oldest had a race.  Ended up coming home with a 1st & 3rd place overall!  We were so very proud but also sad that we couldn't be there to watch him do so well.  But the following weekend we had his regular TORN race and it was the first time ever that he came home with 2 - 1st place wins!!!!!  He just continues to amaze us with his racing ability.


The following weekend we had a Father's Day Celebration ~ had a wonderful time and great food and great memories!


Then the next week I was about to become the mother of a teenager!!!!  Seriously?!?!?!  What happened to my baby?  And who is this hormonal thing that now lives in my house????  :-)


I hope he had a great birthday week....he spent it at a motocross camp and ended it with a birthday party with his fellow "hospital" brother as we call him.  (they both ride/race together)  Then it was off to another race....came home with a 2nd place on Saturday....and a 1st & 3rd on Sunday!  


By now, I'm starting to get really worn out!!!!  But the month isn't over yet!  All this week my princess has been in art/craft camp.  Thank goodness for my mom and her taxi cab skills!! ;-)  I'm beginning to think that I need a wife...a stay at home wife!!!


This weekend will bring June to a close...princess will be leaving for her dad's for the month.  Teenager has a race and then he too will be leaving for the month.  Maybe July won't be as busy, but I sure hope it goes by just a fast....so I will have my full nest again!

BuffMother in Training

Well I'm taking a chance and starting something new that I found on the good ole internet.....BuffMother Hormonal Timing.  I've been working out consistently for 18 weeks and still have a long ways to go.

I'm hopeful that this will help get me there.  I'll try and keep updating my progress.
